There’s something so simple, yet so satisfying about a veggie & protein-packed Greek salad. I mean, what’s better than fresh, crunchy vegetables, salty feta and olives, and a light, zippy dressing all tossed together?

It’s probably why mychopped Greek chickpea salad is one of the most popular salads on my site, and why this delicious, easy Greek chicken salad will be your new fav lunch to meal prep. This beautiful Greek salad is part of my “salad in a jar” series and has everything you could need in a satisfying lunch.

We’re adding both chickpeas and grilled or baked chicken to this recipe for double the protein, plus my homemade Greek dressing that is oh-so refreshing and tangy. Layer up all of the goods in amason jar and enjoy an easy lunch on the go!

The key to making a salad in a jar

I love making and storing salads in jars because they’re such an easy, fun way to meal prep! The key to a perfect mason jar salad is to layer the ingredients in a way that they don’t get soggy. You’ll always want to put the dressing at the bottom, followed by crunchy veggies, protein, and greens at the top. Get all of my mason jar salad tips & recipes here!

Everything you’ll need to make this Greek chicken salad

Say hello to crunchy veggies, tons of delicious protein, and a light, flavorful Greek dressing that will knock your socks off. Here’s what you’ll need to make this Greek chicken salad:

  • For the dressing: I have a homemadeGreek dressing that you can use both in the salad and to marinate the chicken if you’re cooking it from scratch. You could also use my homemade tzatziki sauce, or feel free to use your favorite store-bought Greek dressing.
  • Chicken: you’ll need cooked, diced or shredded chicken breast. Notes on this below!
  • Chickpeas: we’re packing in an extra boost of protein with delicious chickpeas.
  • Veggies: tomato, cucumber, red onion, and romaine lettuce give the Greek chicken salad plenty of crunch and freshness.
  • Mix-ins: we’re also adding some kalamata olives and feta crumbles for the ultimate savory, salty bites.

Simple ways to add chicken to this Greek salad

This Greek chickpea chicken salad is the perfect way to use up leftover chicken or even rotisserie chicken. If you’d like to cook chicken from scratch we recommend:

  • Marinating the chicken in the Greek dressing that you’ll be using for the salad itself
  • Grilling or baking it
  • Then dicing it up or shredding it using one of these techniques!

You could also make my Baked or Grilled Honey Mustard Chicken and add some of it to your salad for ease.

Easily customize your Greek chicken salad

This Greek chicken salad is super easy to customize with what you have on hand and to your taste preferences. Here’s what I can recommend adding and/or swapping:

  • To make vegetarian: simply omit the chicken and more chickpeas or 1 cup of cooked, cubed tofu. Learn how to grill tofu here!
  • Add some healthy fats: feel free to add 1/4 diced avocado for a creamy boost of healthy fats.
  • Choose your mix-ins: in my opinion, kalamata olives are a must for a Greek-inspired salad, but feel free to use your favorite olives like black or green olives, or omit them if you’re not a fan.

How to make this Greek chicken salad in a jar

  1. Prep the dressing. Start by making the Greek dressing or choosing your fav store-bought Greek dressing.
  2. Chop your produce. Chop and dice all of your veggies and fruits as directed so that they’re bite-sized.
  3. Layer the mason jar.Add all of the ingredients to yourmason jar in the following order: dressing, tomato, cucumber, chickpeas, red onion, olives, feta, chicken breast, and romaine.
  4. Store, then serve.Store your mason jar salad in the fridge until you’re ready to eat it, then enjoy!

Storing & serving tips

Store the Greek chicken salad in a 16 ounce mason jar or meal prep container for up to 2-3 days. Because it’s tricky to create the layers in a meal prep container, I recommend storing the dressing separately and adding it right before serving. Simply pour the salad out from the jar into a bowl or onto a plate to enjoy it, or mix it right in your meal prep container.

The best healthy Greek-inspired chicken salad loaded with chickpeas, fresh veggies, feta, and kalamata olives. Toss this light and simple Greek chicken salad with a flavorful Greek dressing, layer in a mason jar, or put it in meal prep containers for the perfect weekday lunch!

Ingredients

  • 2 tablespoons Greek dressing*
  • 1 tomato, diced
  • 1/4 cup diced cucumber
  • 1/2 cup cooked chickpeas
  • 2 tablespoons diced red onion
  • 1 cup diced or shredded grilled or baked chicken breasts* (see notes section for the perfect marinade)
  • 1/4 cup pitted kalamata olives
  • 2 tablespoons feta crumbles
  • 1-2 cups chopped romaine

Instructions

  • Make the mason jar salad by adding the ingredients to a 16 ounce mason jar (or equivalent) in the following order: dressing, tomato, cucumber, chickpeas, red onion, olives, feta, chicken breast, romaine. Store in the refrigerator for up to 2-3 days until you’re ready to eat. When ready to eat, simply pour ingredients into a bowl or onto a plate and enjoy! Feel free to double the recipe to make 2 mason jar salads.
